1. Peel
and devein the shrimp. Rinse and place the shrimp in a saucepan.
Pour in enough water to just cover the shrimp. Bring the saucepan to
a boil. Reduce the flame and simmer for 10 minutes or until the shrimp
curl and turn pink. Drain and chill.
2. When
the shrimp are cold, add the mayonnaise, celery, horse radish,
scallion, lemon juice, jalapeno pepper and salt. Gently stir to blend well.
Refrigerate and serve chilled.
