Pickled
Jalapenos
Makes 3 cups

1 Pound fresh jalapeno
peppers, stems removed

1 Small onion
-
6 Ounces white vinegar
-
1 Large teaspoon
salt
-
2 Cloves garlic
In a food processor or blender add the peppers, onion and garlic.
Process (or blend on the chop setting) into minced pieces. Remove
and transfer to a container fitted with a lid. Add the vinegar and
salt. Stir and marinate in the refrigerator for one week before
using. This stores for a long time in the refrigerator.
