Stewed
Zucchini
Serves 2

1 Zucchini, sliced
-
½ Small onion,
sliced
-
1 Clove garlic, crushed
-
1 Tablespoon butter
-
1 Teaspoon fresh Italian
parsley, chopped
-
¼ Teaspoon sage
-
Salt and freshly ground
black pepper
-
Grated Romano cheese
In a sauce pan
add all of the ingredients except the cheese.
Cover and simmer
for 15 minutes or until
the zucchini
just begin to collapse. Add a pinch of water
to the pan if
necessary. Serve and garnish
with grating
cheese.
