Spinach & Rice Bake
Serves 2
     1. Bring the water to a boil in a saucepan. Add the rice and cover.
         Simmer on low heat for 20 minutes or until the rice is tender.
     2. Wash the spinach under cold water and drain. Steam the
         spinach until tender (10-15 minutes). Squeeze all of the water
         out of the spinach.
     3. Heat the oil in a sauté pan. Add the onion and sauté until the
         onion becomes limp.
     4. In a bowl, add the milk and egg. Beat to blend well. Add the
         cheddar cheese and stir. Mix in the onion and spinach. Stir to
         blend. Add the rice and gently stir to blend well.
     5. Pour the rice and spinach mixture into a 2 quart casserole
         baking dish. Spread the mixture evenly and sprinkle the top
         with the parmesan cheese. Cover and bake in a preheated
         350º F oven for 30 minutes.
