Potato Latkes
 
 
Makes ~ 22
 
 
   
 
 
 
 
     1. Scrub and wash the potatoes clean. Cut them into cubes.  Dry and set them aside.
 
     2. In a blender add the onion, garlic, parsley, egg, cheese,salt, black pepper and
         flour. Blend for a few minutes. Add half of the potatoes to the mixture and blend.
         Add the remaining potatoes and blend until the mixture is smooth.
 
     3. Add enough oil to coat the bottom of a large skillet and heat until hot. Pour a large
         spoonful of the potato mixture  into the skillet (forming it into 2-2½ inch circles).
         Fry until browned on both sides. Continue with the remaining  potato mixture.
 
     4. Drain the latkes on paper towels and serve.
