1 Large green bell
pepper, cut into 1 inch squares
2 Roma tomatoes,
cut into 1 inch cubes
1 Large onion, cut
into wedges
1. Crush
the garlic with the flat end of a knife or garlic press and mince. In a
small
bowl, add the garlic and the salt. Mash with
a spoon until it is almost a paste.
2. In
a bowl. stir together the lemon juice, oil, salt and garlic. Add the beef
and
marinate in the refrigerator for 2 hours or
over night. Turn the beef on occasion.
3. Alternate
threading the beef, tomatoes, onions and bell peppers on skewers.
4.Grill the skewers for 20 minutes, making sure to rotate the sticks
on all four sides.
