Italian Sun Dried Tomatoes
 
 
 
 
   
 
 
 
 

     1. Place the tomatoes in a bowl and cover with water. Soak for
         30 minutes or until softened. Drain, rinse and pat dry with
         paper towels.
 
     2. Place the tomatoes in a container fitted with a lid. Add the oil,
         capers, garlic and oregano. Stir to blend well. Add salt to taste.
 
     3. Cover and refrigerate for several days. The longer it sits, the
         better.
