Rice & Vegetable Medley
 
 
      Serves 2
 
   
 
 
 
 
 
     Bring the water to a boil in a saucepan. Add the rice and
     salt. Stir once. Return to a boil and cover with a tight fitting
     lid. Reduce the heat and simmer for 20 minutes or until the
     rice is tender. Remove the lid if water remains. Toss with
    the mixed vegetables and serve with Stewed Beef.
