Baked Italian Rice
 
 
Serves 4
   
   
 
 
 
     1. Heat the oil in a sauté pan. Break apart the sausage and add it to the pan.
         Cook until brown. Add the onion and garlic. Sauté until limp .
 
     2. Put the rice in a large bowl and add the tomato sauce, basil and the sausage
         and onion mix. Gently toss to blend. Reserve some mozzarella and Romano
         cheese for the topping and add the remainder to the rice. Stir to blend.
 
     3. Transfer the rice to a 2 quart casserole baking dish and  top with the rest
         of the cheeses. Bake covered in a preheated 350º F oven for 30 minutes.
