Makes 1 dozen
1 Dozen small clams
¾ Cup plain
2 Tablespoons grated
1 Tablespoon fresh
Italian parsley, finely minced
2-3 Cloves garlic,
4 Tablespoons butter
Open the clams without breaking the shellls and rinse
Loosen the meat with a knife. Place the meat of 1 clam on half a
shell. Continue with the remainder. Set aside.
the bread crumbs with the cheese, parsley, oregano,
garlic and pepper. Mix the bread crumbs evenly.
the clam shells with the bread crumbs and place on a cookie
sheet. Top the clams with a pat of butter.
in a preheated 350º F oven for 15-20 minutes. Cool and
serve with lemon wedges.
